1 kilogram ripe plums
250 grams sugar
100 ml water
60 grams dark chocolate
Wash the plums and remove the pits, then put them into a heavy-based saucepan, add 100 ml of water and bring to a boil (on medium heat). Simmer for 25 minutes, stirring often (they tend to stick to the pan). After 25 minutes, add the sugar, stir until dissolved, raise the heat, bring to a boil and simmer for another 30 minutes, stirring quite often. Add the chopped up chocolate, stir well and cook for another 5 minutes. The jam should be very thick. Remove from the heat, pour into sterilised jars and seal.
