If you love fruit teas, this little cake is just the thing for you. Very moist and flavourful, full of dried fruit, orange and cocoa powder, the cake is delightfully refreshing. If you like, you can substitute the pomegranate tea for other fruit tea you like. The cake is dairy-free.
Ingredients:
300 grams flour
350 ml brewed pomegranate tea (or any fruit tea you like)
200 grams raisins
200 grams sugar
50 ml vegetable oil
3 teaspoons cocoa powder
2 teaspoons baking powder
1 egg
1 orange
1 teaspoon cinnamon
Preparation:
Pour the freshly made, piping hot tea over the raisins, and set it aside, to cool down a bit. Zest the orange, and squeeze the juice; also set aside. Sift the flour with the cinnamon, cocoa powder and baking powder; add the sugar and whisk well. Make a well in the centre and add the dried fruit and tea, slightly beaten egg, oil, and the zest and juice of an orange and mix very well. Pour the batter into a lined cake pan (23 cm; 9") and bake, in a preheated oven, at 180˚C, for about 40-45 minutes (after about 20 minutes, cover with foil, to protect the top from burning). Decorate to your liking and serve chilled.
