APRICOT HAZELNUT COOKIES

Ingredients:
180 grams flour
120 grams unsalted butter
100 grams dried apricots
50 grams sugar
50 grams roasted hazelnuts
2 tablespoons honey
1 egg
½ teaspoon baking powder


Beat the butter, sugar and honey until lighter in colour and creamy, then add the egg and blend well. Add the flour sifted with the baking powder, and then add the crushed hazelnuts and finely chopped dried apricots. Using a cookie scoop, form cookies and arrange them on a cookie sheet lined with baking paper. Bake in a preheated oven, at 180°C, for about 15 minutes, until they are very light golden.
