700 grams apples (peeled and cored)
100 grams sugar
9 filo sheets
2 tablespoons semolina
1 teaspoon cinnamon
1 teaspoon ground cloves
1 teaspoon ground ginger
2 teaspoons lemon zest
100 ml oil
50 ml milk
Peel and core the apples, chop them up into fine pieces (I used a combination of Granny Smith and Golden delicious), tip in the sugar, semolina and the spices, lemon zest and stir very well. Take one filo sheet, brush on a bit of oil, put another filo sheet on, brush it with oil as well, then take the third filo sheet and spread on one third of the filling. Roll it up tightly (tuck in the sides), then repeat with the rest of the sheets (you will end up with three rolls). Brush the rolls with milk; arrange them on a baking tray lined with baking paper and bake in a preheated oven, at 180˚C, for about 35-40 minutes. Dust with icing sugar and serve warm.
