The smokiness of the sausages and the roasted peppers, along with a soft yoghurt dough and pungent garlic make these muffins perfect for picnics or brunches. They are easy to make, take about 20 minutes to bake and they are great with zesty salads and hot dipping sauces.
Ingredients:
250 grams flour
200 grams yoghurt
100 grams cottage cheese
4 tablespoons oil
2 eggs
2 teaspoons baking powder
1 large roasted pepper
250 grams sausage
2 garlic cloves
½ teaspoon yellow mustard
salt, pepper, crushed pepper flakes to taste
Preparation:
Using an electric mixer, beat together the eggs and cheese until smooth creamy, then add the yoghurt, oil and spices, and blend very well. Dice the peppers and the smoked sausage, and mince the garlic. Add the sausages, peppers and garlic to the batter and beat until smooth. Sift in the flour with the baking powder and gently fold it in the batter, using a wooden spoon. Let the batter stand for 15 minutes, then divide it evenly between 12 standard muffin cups (lined with paper liners) and bake in a preheated oven, at 200˚C, for about 15-20 minutes. Serve warm with a salad of your choice.
