180 grams flour
150 ml oil
100 grams dark chocolate
50 grams honey
50 grams sugar
50 grams almonds
30 grams desiccated coconut
20 grams cocoa powder
3 eggs
2 teaspoons rum extract
Sift the flour with the cocoa powder, add the coconut and stir to combine. In another bowl, whisk the eggs with the wire whisk, add the oil, honey and roughly chopped chocolate and almonds, combine, and then add the rest of the ingredients. Pour the batter into a baking dish (mine was 23x30 cm) lined with baking paper, and bake in a preheated oven, at 180˚C, for about 20-25 minutes (mine were done after 23), but make sure you test for doneness with a toothpick, and do not overbake them. Serve with milk or black coffee.
