400 grams flour
150 grams sugar
5 tablespoons orange juice
4 tablespoons oil
4 teaspoons grated orange zest
¾ teaspoon baking powder
2 eggs
100 grams white chocolate
¼ teaspoon orange gel food colouring (optional)
Beat together the eggs, oil and sugar until pale, thick and creamy, about 2-3 minutes. Add the orange juice and orange zest, along with the chopped up white chocolate (or miniature chocolate chips) and food colouring, if using. Blend well, and then add the flour sifted with the baking powder, combining the batter well, first with an electric mixer, then with a wooden spoon.
Leave the batter in a cool place for about 15 minutes, then take out about a tablespoon of it, and arrange them on a cookie sheet lined with baking paper (I used a small cookie scoop and got 35 cookies). Bake in a preheated oven, at 180˚C (350˚F), for 8-10 minutes, no longer (mine were done after 9 minutes). Let them cool on sheets for a few minutes then transfer to a wire rack to cool completely.
