One of the breakfast stars, pancakes, enriched with sweet apples and spicy cinnamon. Perfect for breakfast and brunch, they are quick and easy to make. Don't be afraid of adding the grated apples with the juice they release, the juice will make them soft and sweet. Feel free to use your favourite apples, although I recommend using a sweeter variety.
Ingredients:
150 grams flour
2 teaspoons baking powder
1 teaspoon cinnamon
250 grams grated apples
250 ml milk
1 teaspoon vanilla
1 egg
50 grams sugar
Preparation:
Take two medium-sized sweet apples (like Golden delicious), wash them and grate enough apples to make 250 grams. Sift the flour with the baking powder and cinnamon, and set aside. Beat the eggs with the sugar, on high, until it becomes thick and pale, about 2-3 minutes, then add milk and vanilla and combine well. Add half of the flour and mix it in well using a spatula or a wooden spoon, then add the apples and the rest of the flour, and blend really well. Leave the batter to stand for about 5 minutes, while the pan is preheating.
Pour about a third of a cup (80 ml) of batter in a very lightly oiled skillet, and cook for about 1-2 minutes over medium heat until bubbles form on the surface, then turn it over and cook on the other side for another minute, until lightly brown. Serve immediately with fresh fruit, honey, sauces, etc. Yields 10 pancakes.
